The slow mixing of ingredients and the rest of the dough makes it much tastier. The 18-hour-low-temperature drying ensures that nutrients do not change, unlike an industrial process at high temperatures. Native organic taglierini preserves tradition and the centuries-old way of preparing authentic Italian pasta.
